To prepare this recipe, it is best to take whole fish from zander, but if there is none, you can simply take the fish fillet in the store. The main thing is to defrost the fish fillet well before cooking. Wash the fish, peel them, cut off the tail and head, but do not discard. Make an incision in the bottom of the stomach and remove the insides, wash and cut into slices three centimeters thick. Rub with pepper and a little salt.

Pour water into a four-liter pan, salt and bring to a boil. Peel the onion and garlic, cut the garlic into halves, chop the onion coarsely and add to water. Place the fish head and tail in boiling water, cook for forty minutes.

Finely chop the second onion. Wash the dill, dry and cut. Wash and grate the tomatoes on a coarse grater, discard the peel. Melt the butter in a well-heated pan, sauté the onion, add the tomatoes and simmer for fifteen minutes. Wash the pepper, remove the top and seeds, cut into circles and fry a little.

Add vegetables, fried and fish fillet to the pan, cook for twenty minutes. Serve with fresh dill and sour cream.
