To prepare peppers for the winter, you can use the Lecho Traffic Light recipe. In autumn on sale you can find sweet peppers of various shades: from bright burgundy to yellow and pale green. In order to make the lecho not only delicious, but also look beautiful when served, you need to collect a mix of peppers of different colors.

- 3 kg of multi-colored sweet pepper (Bulgarian)
- 2 kg of small diameter carrots
- 3 l minced tomato
- 1 cup vegetable oil
- 1.5 cups sugar
- 2 tablespoons of salt
- herbs and garlic to taste
- Kitchen tools:
- Thick-walled boiling dishes
- Wooden spoon for stirring

Prepare the vegetables. To do this, peppers need to be cleaned from seeds and cut into 4-6 parts. Peel the carrots and cut into thin circles.

Prepare the fill. To do this, mix in a saucepan a tomato mass of scrolled tomato, vegetable oil, sugar and salt. Boil the fill for 10-15 minutes. Then dip the carrot slices into the mixture and cook for 40 minutes. After that, dip the sliced pepper into the pouring and cook for another 15 minutes. It remains to put finely chopped herbs and garlic 5 minutes before being cooked.

Pour the finished lecho hot in glass jars. Wrap and let cool gradually. The traffic light is ready!

Lids need sterilization, as do jars.
Useful advice
If you like greens, then use dill, parsley, laying them at the last stage.
Take the garlic to taste, pass it through the garlic squeezer.
