Chicken and Vegetable Soup
Chicken-based soups cook very quickly. The most delicious option is a gentle soup of mashed white meat. Add seasonal vegetables such as zucchini and bell peppers. Such a dish will completely replace a full meal and is perfect for baby or diet food.
You will need:
- 2 chicken breasts;
- 2 potatoes;
- 1 large zucchini;
- 1 bell pepper;
- salt and black pepper to taste;
- 0.75 cups of cream.
Those who prefer a lighter version of the soup should exclude cream from the recipe, replacing them with a spoon of vegetable oil.
Rinse chicken breasts, fill with cold water and cook until cooked. Strain the broth, remove the meat from the bones and set aside. Peel potatoes and zucchini, remove seeds from pepper. Dice the vegetables. Put potatoes and zucchini into the broth, salt the soup and cook for 10 minutes. Then add bell pepper and continue cooking until the vegetables are ready.
Pour the soup into a blender, add chicken and mashed the mixture. Return the soup to the pan, pour the cream, add salt to taste. Preheat the mixture without boiling it. Pour in black ground pepper and pour the dish into plates. Before serving, white bread croutons can be added to each serving.
