The amount of ingredients in this recipe is not indicated intentionally, so that everyone can add spices to their taste, independently regulating the spiciness and spice of salting. Eggplant should be thoroughly washed and cut off the tails. If necessary, remove damaged parts of vegetables.

We make a strong pickle, pour the prepared vegetables and bring to a boil in an enameled pan. The lid of the pan must be pressed down with a load so that it cannot be pushed by the eggplant floating up during the boil. It is impossible to determine the exact time of cooking vegetables, it depends on the variety, their degree of maturity and size. You need to cook until soft, after which we remove the eggplants from the brine, which we no longer need, and cool.

Cut the chilled vegetables along in the direction from the wide end not completely, but leave a few centimeters at the base. We open the incised eggplants and place them under pressure on an inclined plane for five hours to squeeze the juice. If this is not done, salty vegetables may have a bitter aftertaste.

After the juice drains, sprinkle the inside of the eggplant with ground pepper, chopped garlic and herbs. We put the halves together and wind them together with threads. Then the vegetables are tightly packed in three-liter jars or a large enameled pan, that is, in the dishes in which they will be stored in the future.

We bring the new pickle with bay leaf and allspice to a boil and cool. Pour vegetables with chilled brine. We close the jars with plastic covers, and the pan with a clean cloth, on top of which we put oppression.

For salting eggplant, as well as for preparing any dish, the quality of raw materials is of great importance. In our case, we need to take small (up to twelve centimeters long) unripe vegetables.

Useful advice

When salting the eggplant, you can add other spices that you like, for example, cloves, cinnamon, coriander, nutmeg and others. This will give the pickle a unique taste and aroma. Spice mixtures such as Suneli hops or curry can also be used.
