- Cottage cheese - 1 kg
- Milk - 1 liter
- Butter - 150 g
- Egg - 1 pc.
- Salt - 1.5 teaspoons
- Soda - 1 teaspoon

Put the cottage cheese in a saucepan, fill it with milk, stir. Place the pot on the stove and bring to a boil, stirring constantly. Cook for 10-15 minutes on low heat, without ceasing to interfere.

Put a piece of gauze in a colander and fold the resulting mass onto it. Allow all liquid to drain.

Then again place the strained mass in the pan, beat the egg with a whisk, add softened butter, salt and soda (do not extinguish soda!).

Stir everything thoroughly, put on the stove, bring to a boil and cook for 15 minutes over low heat, stirring continuously.

Grease a mold for homemade cheese with butter, place the cooled mass inside, cover with a lid or plate and refrigerate overnight. The next morning, delicious home-made cheese is ready to eat!

Cottage cheese for cheese should not be too wet. It is better to buy dry, slightly crumbly home-made cottage cheese on the market.
