You will need

  • 600 g pumpkin (the weight is already peeled vegetable, without peel and seeds);

  • 2 bulbs of red color;

  • 1 head of garlic (vary the amount to your taste);

  • 1 large carrot;

  • 600 ml of tomatoes in their own juice;

  • 3 tbsp. l vegetable oil (ideally olive);

  • 2 tbsp. l soy sauce;

  • 1 tsp curry;

  • Salt at will;

  • Broth (vegetable, meat, allowed to cook on water);

  • Pumpkin seeds.

We start cooking pumpkin soup puree. First of all, take the baking dish. Put peeled pumpkin into it, cut into large pieces.

Peel the onion, cut it into 4 parts, put on top of the pumpkin. Do the same with carrots.

Divide the head of garlic into slices without peeling, put in a baking dish.

Sprinkle prepared vegetables with soy sauce and vegetable oil. Send the baking dish to the oven, preheated to 200 ° C. Cooking time for vegetables is 30-40 minutes (do not forget to stir them a couple of times), bake until soft.

When the vegetables are cooked, transfer them to a deep pan, carefully remove the husk from the garlic. Add tomatoes in your own juice, salt, curry to the products. If necessary, add broth or water to the pumpkin soup. It is important that the liquid fully covers the vegetables.

Put the pan with the ingredients on the gas, boil the contents, then reduce the heat to a minimum and then darken the future pumpkin soup puree for 10 minutes.
