Protein creams are soft and airy; they are suitable for brushing and decorating cakes, filling shu cakes and wafer rolls. Try to cook not raw, but custard, it turns out to be especially tasty. To protect yourself, use only fresh eggs.

You will need:

- 3 egg whites;

- 6 tbsp. tablespoons of sugar;

- 5 drops of lemon juice or diluted citric acid;

- 0.25 glasses of water.

Pour water into the pan, add sugar and, stirring, boil the syrup before the sample on a thick thread. In a separate container, beat the whites in a strong foam. Gently pour the hot syrup into the squirrels without stopping whipping. The mass should compact and become plastic. Add lemon juice and mix. The finished cream can be tinted with food colors, aromatized with syrup or liquor. Please note that the product is not subject to storage, it must be used immediately after preparation.

Custard

Those who prefer a low-fat cream should try the butter and egg-free version. It is cooked quickly and turns out to be very tender and pleasant to taste. Custard is suitable for spreading biscuits and shortcakes, toppings for buns. Such a dessert can be served independently, supplemented with fruits or berries.

You will need:

- 1 glass of milk;

- 4 tbsp. tablespoons of sugar;

- 2 eggs;

- 1 tbsp. a spoon of wheat flour;

- 1 teaspoon of vanilla sugar.

Beat the eggs in a small saucepan, add granulated sugar and vanilla sugar. Pound the mixture until crystals are completely dissolved. Add flour and stir until smooth. Heat the milk and pour into the pan with the egg-flour mixture. Put it on the stove and, stirring, cook the cream until thickened, carefully rubbing the lumps. Cool the finished cream slightly and wipe through a sieve. Arrange the dessert in a bowl or use to decorate pastries.
