Heat 50 g butter. In half a glass of warmed (but not hot) kefir, dilute 2/3 tablespoon of dry yeast. In another glass, pour another half a glass of kefir and dissolve 1/2 teaspoon of salt in it. Pour two cups of sifted flour into a suitable dish, make a recess in it and pour all the kefir into it, add warmed oil and mix well. Leave the dough to approach in a warm place for 2 hours. If it comes earlier, slightly knead it and let it stand on, this will give it splendor.

One of the main ingredients of the Ossetian pie is greens. You can use green onions, dill, parsley, celery, thyme, rosemary, etc. - You will need approximately 300 g of various herbs. Shortly before the dough finally comes up, wash the greens and chop finely. Add to it 150 g of Adyghe cheese and 100 g of sour cream, mix well. The filling for the pie is ready.

Pour out the dough onto a table sprinkled with flour and knead, adding a little flour. It is better to grease hands with a small amount of sunflower oil. Divide the kneaded dough into two pieces in a 2: 1 ratio. From the first (large) part of the dough, roll out a thick pancake with which to cover the cake baking dish. The size of the pancake should be such that it covers the bottom of the form and its sides.

Put the filling on the first pancake (in the form), distribute it evenly. Roll out the second pancake from the rest of the dough, place it on the pie and connect the edges of both pancakes in a circle. In the center, make a small hole for steam to escape. The cake can be decorated with thin strips of dough, laid crosswise on top in the form of a net.

Ossetian pie should be baked for 20-25 minutes in an already preheated oven at a temperature of 200 ° C. Control readiness visually by the color of the upper crust, it should be a delicious ruddy color, but not faded or burnt. After removing the cake from the oven, grease the outside with butter to add shine. After that, let it cool for 15 minutes, covering it with a towel, and serve. The hole in the center of the cake can be decorated with several branches of greenery.
