To make home-made cream cheese with mushrooms, you will need the following products:

  • Homemade cottage cheese - 0.5 kg
  • Champignons - 200-250 g
  • Chicken Egg - 2 pcs.
  • Sour cream (preferably homemade) - 2 tablespoons
  • Butter - 50 g
  • Salt (preferably finely ground) - about 2/3 teaspoon
  • Baking soda - about 2/3 teaspoon
  • Greens (dill and parsley) - 1 small bunch
  • Garlic - 1-2 cloves

Mushrooms for cream cheese should be chosen smaller, white, without dark plates on the inside of the hat. Before cooking, they should be washed, scalded with boiling water, lightly fry in vegetable oil, salt and pepper to taste. Allow to cool to room temperature, finely chop and set aside.

To prepare the cheese mass, you will need two pans: large and small. In a large pot we collect a little water and put on fire. Cream cheese must be cooked in a water bath.

Put the cottage cheese in a small pan, break the eggs, add sour cream, softened butter, soda and salt, beat it all with a blender, put in a water bath and cook the cheese mass, stirring constantly until it becomes completely uniform and viscous.

Add finely chopped mushrooms and finely chopped greens to the molten cheese mass. To enhance the piquancy, you can add 1-2 cloves of garlic, crushed in a garlic press. Once again, beat the whole mass with a blender.

Ready melted cheese is poured into a storage container. It can be an ordinary glass jar. Small jars with a wide neck and screw top are well suited.

After the cheese has cooled to room temperature, you can put it in the refrigerator. The cheese is ready to eat. You can spread it on bread, cook various sandwiches with it, add it to spaghetti.

Instead of champignons, ham can be used as a filler; you can also add a pinch of cumin during the preparation process. Home-made cream cheese is an excellent lifesaver for a quick and high-calorie snack. And the taste of this homemade product will appeal to members of the whole family.
