Puer is grown only in southern China, in Yunnan. A feature of this mountainous area is increased humidity and a warm climate. Wild tea trees are often found in dense forests, from the leaves of which Puer tea is made. The older the tree, the juicier its leaves, and the more aromatic and better tea. And there are many such trees in Yunnan. Puer has a special production technology - the collected leaves are processed and then subjected to a fermentation process - aging. After that, the dried leaves are twisted, and then pressed. Puer in the form of pressed tortillas, squares, bricks is sold.

Puer is unique in that its quality improves with age. The older the tea, the tastier it becomes more pleasant and softer. Three types of puer are distinguished depending on the production method - young shen puer, seasoned shen puer and shu puer.

How to brew puer? The method of preparation is quite simple - it, like other teas, is poured with boiling water in a teapot. Puer brew as follows.

Before you start brewing tea, you need to rinse it. A piece is broken off from the pressed cake and pre-washed with hot water. To do this, they put it in a kettle and pour boiling water for 10 seconds. This will get rid of dust and soak tea with water. This water must be drained and only then brew puer.

For brewing, about three minutes is enough, but still it is a matter of taste and therefore, everyone needs to determine how strong the puer is brewing. If the tea is very strong, you need to subsequently reduce the brewing time, if it is weak, increase it on the contrary. For more than three minutes, steaming puer is undesirable - it will infuse, and the taste will become bitter.

3. After brewing, do not discard the tea, but pour water again. You can brew Puer up to four times and use about four grams of tea per 100 milliliters of water.

In order to properly brew puer, it is necessary to adhere to the temperature of the water, because for each type of puer, it is different. For a young sheng puer, 80 degrees is enough, for a mature sheng puer - 85-100, and shu puer should be filled with boiling water only. If desired, milk or honey can be added to tea.

If puer is brewed correctly, it invigorates, positively affects the digestive system, stabilizes the metabolism and removes harmful substances and waste from the body.
