It is the cocoa tree beans that contain useful substances (antioxidants, polyphenols, vitamins) and have valuable properties, which are confirmed by nutritionists, cosmetologists and even dentists. Therefore, if these two products are the first to appear on the chocolate bar, you can “tick off” - most likely, you are on the right track.

The best chocolate should not contain cocoa powder as a base (in fact, it is waste from the processing of grated cocoa, dried cake), and even more so - substitutes for valuable cocoa butter (the most common are coconut and palm). The product becomes cheaper, and its consumer qualities are noticeably reduced. The most unpleasant thing about this is that sometimes expensive chocolate also contains these undesirable components.

From a nutritional point of view, black, or bitter, chocolate is the most healthy. The higher the percentage of cocoa (not less than 75%, and better from 85%), the more welcome the guest should be on the menu. The correct product contains a minimum of carbohydrates and is very satisfying due to the high fat content - a couple of slices of such chocolate are a rather nutritious snack that does not harm either the figure or the vital systems of the body.

It is advisable to store chocolate in conditions that do not allow temperature changes, otherwise it is covered with a bluish coating (although this practically does not affect the taste). A high-quality product has a smooth matte surface or with a slight tint, breaks with a dry crack, has a harmonious, slightly astringent taste. It is recommended to eat no more than a few cloves per day - this amount is enough to maintain a figure, increase the level of serotonin in the blood and, most importantly, to find true gourmet happiness.
