One way to cook fish is to bake it in salt. In this case, the fish retains all its taste and beneficial properties and is an excellent dietary dish, as it is prepared with the addition of a small amount of vegetable or olive oil.

    • salt - 1.5 kg;
    • olive oil - 2 tbsp;
    • ground black pepper;
    • lemon juice;
    • herbs (dill

Defrost the fish, gently gut it. Scales do not need to be cleaned. Rinse the fish under cold running water. Remove excess moisture from the fish by patting it with a paper or plain towel inside and out. Preheat the oven to 220 degrees.

Lubricate the fish on both sides and inside with olive oil, drizzle with lemon juice and sprinkle with black ground pepper. Start the abdomen with herbs (you can use dry ones). You can put a few slices of lemon in the abdomen.

On a baking sheet, put a piece of parchment, preferably according to the size of the baking sheet. Pour salt on a parchment with a layer 1-1.5 cm thick, giving it an oval shape. In size, the oval should be slightly larger than the size of the fish itself. Put fish on top of the salt.

Sprinkle the remaining salt with water and put it on top of the fish, gently squeezing the salt layer with your hands so that it does not crumble and the whole fish is evenly covered with salt carapace. Bake the fish in the oven for about 30-40 minutes, depending on the weight of the fish.

Remove the fish from the oven. With a hammer for beating meat or with the handle of a knife, carefully break the salt crust. You can cover the fish with a towel so that the pieces of salt do not scatter to the sides. Gently transfer the fish with a spatula to a board or a flat dish, gently brush off excess salt.

In fish, separate the head, peel off and remove all bones. Cut into portions. Serve with boiled potatoes, mashed potatoes, rice, boiled, stewed or fresh vegetables.

Useful advice

For baking in salt, it is better to use salmon fish, since this type of meat is more nutritious and has a delicate taste. Instead, you can use lime juice instead of lemon juice.

Fish prepared in this way can also be used as a filling for a sandwich by putting a piece of salad, a slice of tomato and a piece of fish on a piece of fresh bread or toast.
