Vegetable omelette will be the perfect breakfast for the whole family. The omelet turns out to be tasty, satisfying and healthy. The dish is prepared quickly and very simply. The indicated amount of food is enough for 3 servings.

You will need
- - potatoes - 2 pcs.;
- - tomato - 1 pc.;
- - eggs - 3 pcs.;
- - broccoli - 150 g;
- - Cheddar cheese - 400 g;
- - sour cream 15% - 50 g;
- - vegetable oil - 2 tbsp. l.;
- - a mixture of herbs (dill, parsley, cilantro) - 20 g;
- - salt - a pinch;
- - ground black pepper - a pinch.

Rinse the potatoes with water and boil until cooked. Then peel and cut into thin circles. Boil broccoli in salted water until half cooked (2-3 minutes). Cool, cut into pieces. Cut the tomatoes into thin slices.

Beat eggs with a mixer, salt, pepper. Add sour cream and whisk the mixture again.

Dice the cheese or grate it on a coarse grater. Rinse greens with water, remove coarse stems, chop finely. Combine cheese and herbs, mix.

Grease a baking dish with vegetable oil. Put potatoes on the bottom, then broccoli and tomato slices. Pour the vegetables with egg-sour cream mixture. Sprinkle a mixture of cheese and herbs on top. Bake the omelet in the oven at a temperature of 180 degrees for 15-20 minutes (until golden brown). Breakfast is ready! Bon Appetit!
Useful advice
You can take any hard cheese. Omelet can be cooked in a pan under the lid or in a slow cooker in the "Baking" mode.
