You will need

    • 100 g of wheat flour;
    • 50 g of chestnut flour;
    • 100 g almond flour;
    • 100 g fat cream;
    • 4 eggs;
    • 100 g of sugar;
    • 0.5 tsp baking powder for dough;
    • 150 g pitted prunes;
    • 4 tbsp cognac.

Instruction manual

1

This recipe requires almond flour, but if you do not have it, you can grind the kernels of nuts in a coffee grinder. Almonds must first be peeled. Pour boiling water over it for one minute, then drain the liquid and soak the nuts in cold water. This is usually enough to make them easy to clean. Otherwise, repeat.

2

Remove the peel from the almonds and remove excess moisture with a napkin. Then cover the baking sheet with baking paper and finally dry the nuts in the oven at a temperature of no more than 100 degrees. Make sure that they do not darken, otherwise the taste will change.

3

Now you can cool and grind the almonds in a coffee grinder. There are subtleties here too. To prevent a sticky mass, put a little almonds in a bowl of a coffee grinder, and also add icing sugar (40 g of almonds will require 1 tablespoon of icing powder). Do not store the resulting mixture, but immediately start cooking.

4

Wash the prunes and dry with a napkin. Cut into 2 or 4 parts and fill with cognac for impregnation. It will take 30 minutes. In the meantime, do the dough.

5

Separate the whites from the yolks. Beat 4 squirrels to cool foam while adding sugar. Pound 2 yolks and combine with whipped whites. In this case, pour the proteins into the yolks, and not vice versa.

6

Now add the cream, mix and slowly pour the mixture of sifted wheat flour and chestnut, add almond flour and baking powder for the dough. At the same time, try to mix gently so that the dough does not settle.

7

Cut cognac-soaked prunes into smaller pieces and mix with the dough. Grease a baking dish with butter and sprinkle with flour or cover with parchment paper. Put the dough and bake in a hot oven. At first, do not open the door; baking may settle.

8

Determine readiness by piercing a cupcake with a match or a hole. If it turns out to be dry, put the cupcake out of the mold, cool and sprinkle with powdered sugar. Or pour melted chocolate.
