  • - 5 teaspoons of lemon juice (can be replaced with table vinegar)

Separate raw yolks from protein and pour into a container for making mayonnaise.

Separate the boiled egg yolks and add to the bowl with raw yolks.

Add mustard, sugar and salt.

Mix everything well, grind or beat with a mixer into a homogeneous mass.

Without stopping to beat the mixture, little by little, with a teaspoon, pour in vegetable oil. When the mayonnaise mass becomes uniform, pour in the lemon juice (or vinegar). Mix everything again and beat with a mixer.

If the mayonnaise turns out to be too dense and thick, you can add a little boiled water or milk - and beat again until a homogeneous semi-liquid of a homogeneous mass.

Transfer the mixture to a jar or mayonnaise and refrigerate. Mayonnaise is ready. It can be spread on bread, seasoned with various salads and added to soup or borsch to improve the taste.

Ready mayonnaise is stored in the refrigerator, best of all - in a glass jar with a lid.

Home-made mayonnaise can be stored for up to 7 days, so it makes no sense to cook it for the future. It is better to cook a small amount - up to 200 grams.

All products from which home-made mayonnaise is made should be neither hot nor cold, but should have room temperature.

Before separating raw yolks from proteins, it is advisable to thoroughly wash the chicken eggs, and preferably with soda.
