  • For filling:

  • Fresh Cherry 600 gr

  • Potato starch 5-6 tbsp. spoons

  • Sugar (about 100 grams, if the cherry is too acidic - 150 grams or more)

Sift flour into a blender bowl, add sugar, salt. Add the cold butter cut into cubes, beat the mixture in a blender for a few seconds until small crumbs are formed. Add the yolk and beat for a few seconds until smooth.

Add water and juice and quickly form a ball of dough. Wrap with cling film and put in the refrigerator for 30-40 minutes.

At this time, wash and free cherries.

Roll out the dough in a thin layer, transfer the layer to the mold and trim the sides. We prick the form with a fork in several places and put in the oven preheated to 180 degrees for 15 minutes.

At this time, prepare the filling: add sugar and starch to the cherry, put on medium heat and mix thoroughly. It is necessary to heat the filling to a state of very thick jelly (if necessary, add more starch). It will take about 7-10 minutes.

After the time has passed, we take out the base from the oven and pour the filling into it, level it. We put the tart back into the oven for 10-15 minutes until the filling hardens. Before serving, the tart should be cooled to room temperature, otherwise the filling will begin to drain from the base.
