  • For strawberry mousse:

  • - 500 g of strawberries (fresh or frozen);

  • - freshly squeezed juice of half a small lemon;

  • - 1/3 cup sugar;

  • - 4 teaspoons of gelatin powder (12 g);

  • - 300 ml of fat cream (36%);

  • - half a pack of oblong (round) cookies;
  • For chocolate cream:

  • - 100 ml of whipped cream (36%);

  • - 100 g of dark (milk) chocolate;

Prepare the dough: beat the whites, add sugar in several stages, egg yolks. Then add sifted flour, cocoa, baking powder, grated chocolate. Stir gently so that the foam does not fall.

Pour into a form covered with parchment paper, align. Bake for about 12-15 minutes at 180 ° C. Cool the cake.

Prepare a round container having the shape of a hemisphere with a diameter of about 20-22 cm and a height of 10 cm (colander can be used), covered with aluminum foil.

Cut the chocolate cake into smaller pieces (3-4 pieces), arrange them carefully, form a semicircular shape, the pieces should not protrude beyond the edges of the form.

To prepare strawberry mousse: put strawberries (frozen without defrosting), lemon juice, sugar in a pan. Heat, stirring until sugar is completely dissolved. Mix with a blender in mashed potatoes.

Soak gelatin in cold water, allow to swell. Allow to dissolve in a water bath or in a microwave, cool at room temperature.

Whipped chilled cream, gradually add to the strawberry puree, mix gently. Pour the chocolate cake with the finished strawberry mousse. Put cookies on top. Refrigerate for several hours, preferably at night.

Cook the chocolate cream: in a small saucepan, bring the whipped cream to a boil almost. Remove the pan from the heat, add the chocolate slices, let stand for 2 minutes, then mix to make a smooth chocolate cream.

Tilt the cooled strawberry cake onto a dish, remove aluminum foil, pour chocolate cream on top, decorate with fresh strawberries.

Take into account that there is a lot of water in frozen berries and therefore one should not be mistaken with the amount of gelatin.
