  • - olive oil - 3 tbsp.;

  • - Gorgonzola cheese - 70 g;

  • - dried ham (Parma or serrano) - 200 g;

  • - dried tomatoes - 10 pcs;

  • - ground black pepper;

  • - salt;

  • - pork tenderloin - 500 g;

  • - garlic - 1 clove.
  • For the sauce:

  • - Gorgonzola cheese - 130 g;

  • - butter - 1 tbsp;

  • - cognac - 20 ml.

Peel the pork tenderloin from the fibers, cut across into pieces, 1 centimeter thick. Make a soft fillet of the pieces, slightly discouraging them. Sprinkle with freshly ground pepper and salt (one pinch of salt and one pinch of pepper). Preheat oven to 200oC.

On each fillet, lay out one piece of small sized dried tomato, a slice of Italian gorgonzola cheese. Wrap the pieces of fillet in Parma ham, spread them with olive oil.

Place prepared rolls on a baking sheet pre-coated with foil in one or two layers. You can use baking paper instead of foil. Place the baking tray with rolls in the oven and bake for 15 minutes. During this time, the meat should be baked inside.

While preparing pork rolls, start making sauce from the remains of gorgonzola. Melt the butter in a frying pan, pour in the cognac and gently set it on fire. Next, remove the pan from the heat and place slices of gorgonzola on its surface. Stir while melting the pieces.

Serve the finished pork rolls to the table with a salad of tomatoes, cucumbers, onions, garlic, radishes. Separately, you can serve arugula, sauce and sliced ​​white and black bread.
