Garlic mashed potatoes, or scordaglia, is a traditional Greek hot appetizer, which is also recommended as a side dish for meat, vegetable or fish dishes. This garlic appetizer is prepared from basic products and is especially indispensable for fasting.

You will need
- -5-6 medium potatoes
- -1 large lemon
- 8 cloves of garlic
- coarse salt
- -0.5 Art. olive oil

Wash the potatoes thoroughly and boil them in their skins until ready (it will take about 25 minutes). Rinse the lemon and squeeze the juice out of it. Peel the garlic, chop a little, and then crush with a little salt in a mortar.

Peel one potato from the peel and mash it with garlic until the consistency of a smoothie, pouring olive oil and lemon juice. Repeat the process in turn with all remaining potatoes.

Make mashed potatoes as quickly as possible so that the potatoes do not have time to cool, otherwise it will be more difficult to achieve a uniform composition without lumps. Serve as hot as possible to the table, and salt if necessary.

To peel garlic easily and effortlessly, pre-soak it in cold water for 10-12 minutes.
