Olive oil, very popular in Europe, is mainly used in our country for the preparation of salads. Meanwhile, based on it, you can bake a flavored cake, such as lemon. A light smack of butter will pleasantly tint the citrus aroma and give the cake some zest.

You will need

    • For 8 servings:
    • 1 lemon
    • 1 cup flour;
    • 1 sachet of baking powder;
    • ¾ cup sugar;
    • ¾ cup of olive oil;
    • 5 eggs.

Instruction manual

1

Separate the whites from the yolks using a special separator or spoon. In yolks, add 2 parts of sugar norm and beat everything with a mixer until smooth. Cut the lemon and squeeze from it 1.5 tablespoons of juice. Pour the juice and olive oil into the egg-sugar mixture and beat again for about 3 minutes. Add flour mixed with baking powder and about 1.5 tablespoons of grated lemon peel to the mixture.

2

In a separate bowl, whisk the proteins (preferably cold) with salt until a high white foam is obtained. You can determine the strength of the foam by the peaks. If you turn the bowl with squirrels, then not a drop will fall from it. Gently add the remaining sugar to the foam and continue whisking for another 3 minutes. Next, gently mix a third of the protein mass into the dough. Stir with a wooden spoon. Add the remaining proteins and gently mix the resulting mixture again.

3

Cover the bottom of the mold with parchment baking paper, grease it with a drop of olive oil. It is more convenient to do this with a silicone brush. Put the dough in a mold, sprinkle a little sugar on top to form a nice crust. Bake the cake for about 45 minutes at a temperature of 180 ° C on the middle shelf of the oven. Determine the exact time in accordance with the characteristics of your stove. Let the cake cool in shape, otherwise it is easy to break.

4

Next, separate the parchment paper with a knife and transfer the cake to a plate. Pie can be served both warm and cold with a cup of coffee or black tea. On top of the cake you can decorate with lemon meringues.

Useful advice

This recipe can also be used for baking cookies. In this case, the dough should be placed in aluminum or silicone molds for muffins. Lubricating such molds is not necessary.
