Summer is ideal for preparing salads from herbs. You will need

  • - 200 g of asparagus;

  • - 300 g of arugula;

  • - 1 large avocado;

  • - olive oil;

  • - fresh orange and lemon juice;

  • - 60 grams of pine nuts;

  • - basil;

  • - honey;

  • - salt and pepper to taste.

Rinse and dry the asparagus. Cut into small pieces, moisten with olive oil, season with salt and pepper. Place in the baking tray and cover with aluminum foil.

Preheat the oven to 250 degrees Celsius. Place the asparagus in the oven for 15 minutes until its top is soft. While the asparagus is cooked, brown the pine nuts in a frying pan without oil, so that they acquire a good golden hue.

Cut avocado and arugula into small pieces, place in a bowl with the prepared asparagus. Add 3 tablespoons of olive oil, 1 tablespoon of lemon juice, 3 tablespoons of orange juice, a spoonful of honey, finely chopped basil and season with salt and pepper to taste. Mix well the resulting salad of arugula, asparagus and avocado, sprinkle with pine nuts and serve.
