You will need

  • Ingredients for 4-6 servings:
  • - turkey fillet - 800 g;

  • - feta cheese - 200 g;

  • - pitted olives - 200 g;

  • - 2-3 cloves of garlic;

  • - 2 tablespoons of capers;

  • - 100 g of fresh spinach;

  • - a bunch of parsley and a couple of sprigs of thyme;

  • - olive oil;

  • - salt and pepper.

Turkey fillet (preferably breasted) is cut in half, but not completely. We open like a book. We put the turkey fillet with the cut side up, cover with several layers of cling film and beat off with a hammer or rolling pin, trying not to tear the meat!

Getting to the filling: grind capers, olives, parsley and garlic in a blender. Mix the filling with 2 tablespoons of olive oil. We crumble the cheese, remove the stems from the thyme, mix the thyme leaves with the cheese.

Wash the spinach and dry with a towel.

We remove the film from the turkey, put the filling in the following order: spinach leaves, cheese with thyme, a mixture of olives, capers of garlic and oil. Roll the turkey into a roll.

Wrap the roll in parchment paper as tightly as possible. Wrap the ends so that the externally wrapped roll resembles candy. We wrap the roll in foil so that moisture does not get into it during cooking.

In a saucepan with a thick bottom, put the roll, pour it in boiling water until the middle, cook over a minimum heat for 50 minutes under the lid.

Serve the roll in hot or chilled form, cut into neat slices 2-2.5 centimeters thick.
