How to make shortcrust pastry for bagels

To make shortcrust pastry, you need to take the following products:

- 250 g creamy margarine;

- 2 ½ cup flour;

- ¼ cup cold boiled water;

- 1 tbsp. l table vinegar (6%);

- a pinch of salt.

Sift flour through a sieve onto a wooden cutting board. Cut hard (from the refrigerator) cream margarine into slices, mix with flour and chop with a large knife or a special chopper.

Mix cold water with salt and table vinegar in a glass and add a little to flour, continuing to chop with a knife. From the liquid, wheat flour and margarine, prepare the dough, kneading it with your hand. If necessary, add flour so that the dough does not stick to the board. However, it should be borne in mind that from an excess of flour, shortbread dough is too steep. Form a ball from the finished dough and place it in the refrigerator for 30-40 minutes.

Loose bagels can be prepared from shortcrust pastry with cottage cheese, for which you will need:

- 150 g of wheat flour;

- 1 tbsp. l granulated sugar;

- ¼ tsp salts;

- 85 g unsalted butter;

- 85 g of cottage cheese;

- 2-3 tbsp. l fat cream.

Mix the wheat flour with sugar and salt in a large bowl. Cut well-chilled butter and cottage cheese into pieces, about 5-6 millimeters in size, add to the dry ingredients and chop all the ingredients with 2 large knives. As a result, the mixture should resemble large crumbs in appearance.

Then pour cold fat cream on top and continue to chop the dough with a knife or stir with a fork until it begins to collect in large, moist lumps. Blind the bun from the prepared dough, wrap it tightly in cling film and put in the refrigerator for a period of 1 hour to 1 day.

Lemon Cream Bagels Recipe

While the cooked shortcrust dough cools in the refrigerator, make a bagel filling. For her, you will need:

- 1 lemon;

- 1 cup of granulated sugar;

- 1 cup peeled walnuts.

First of all, scald the lemon with boiling water 2-3 times and each time let the lemon stand for 1-2 minutes. Then in a bowl grate the lemon zest on a fine grater and squeeze the lemon juice here (do not forget to remove the seeds first). Add chopped walnut kernels and granulated sugar. Mix well.

Divide the cooled dough into 4 parts, each roll into a round or rectangular layer and grease with melted butter. After that, cut the layers into wedges and put the cooked stuffing on a wide part, distributing it so that it is enough for all the bagels.

Then carefully start wrapping the bagel from the wide side to the narrow one. After making the first revolution, slightly press the dough on the sides and then wrap further. Then put the wrapped bagels on a greased baking sheet and place in the oven for 20-30 minutes to bake at a temperature of 180 ° C. Sprinkle the finished baking with powdered sugar.
