Rizogalo is the name of the famous national dish of the island of Cyprus; even a novice housewife can easily cook it at home. In Greek, “rizo” is rice, and “halo” is milk. Rizogalo has a delicate creamy taste, turning ordinary rice porridge into a delicious dessert!

You will need
- - 1 tbsp. coarse rice
- - 1 small lemon
- - 1 liter of skim milk (preferably 5%)
- - 3/4 Art. granulated sugar
- - 2 g vanilla sugar
- - a pinch of cinnamon
- - almond seeds

Rinse the rice several times under running water until it becomes completely transparent. Drain the water by discarding the rice in a colander.

Wash the lemon and grate the zest on a fine grater. Boil half the volume of milk over a fire, add rice and stir. Boil the cereal for 10-15 minutes, adding a little milk as it boils.

Pour granulated sugar and vanilla into the pan, and place the lemon zest. Continue to cook rice over low heat for another 7-10 minutes. Arrange the pudding in vases or bowls, cool slightly and slightly sprinkle with cinnamon. Garnish with almond seeds when serving.
Useful advice
Pudding can be layered in vases in layers, spreading between them pieces of biscuit or cookies, jam, confiture, pieces of fresh fruit, which will give the dessert a more intense bright taste.
