Classic Lean Cookie Recipe

Often in pastries, baked goods are made from low-fat dough with potato starch and slaked soda. To make cookies, take this set of ingredients:

- premium wheat flour (3 cups);

- potato starch (1 cup);

- refined sunflower oil (150 ml);

- water (150 ml);

- table salt (1 pinch);

- vanillin (1 pinch);

- baking soda (0.5 teaspoon);

- table vinegar 9% (0.5 teaspoon);

- baking powder for dough (1 teaspoon);

- granulated sugar (1 cup).

Sift the flour and combine it with baking powder and potato starch. Add soda, extinguishing it with vinegar (as an option, you can use apple or lemon juice). Pour in the sunflower oil carefully in small doses. Do not forget to mix everything constantly so that lumps do not form. Completely dissolve granulated sugar in water, put the vanillin, then pour the sweet-salty liquid into the flour mass with a thin stream. Knead the soft dough and roll it into a cake about 1 cm thick.

Preparations from sweet lean dough before baking on a baking sheet can be additionally sprinkled with granulated sugar.

Cut cookies in the form of rhombuses, triangles, squares or make any other shapes using special confectionery recesses. Cover the pan with parchment baking paper and cook the lean cookies in the oven for 15 minutes at a temperature of 180 ° C. Confectionery should lightly brown.

Cookies with Carrots and Ginger

Original lean pastries with spices, nuts and carrots turn out to be very soft, tender and delight with an unusual flavoring bouquet. For this recipe you will need:

- grated carrots (250 g);

- oatmeal (250 g);

- premium wheat flour (250 g);

- granulated sugar (2/3 cup);

- refined sunflower oil (1/3 cup);

- baking powder for dough (5 g);

- vanillin (1 pinch);

- chopped hazelnuts (3 tablespoons);

- grated ginger root (2.5 g);

- cinnamon (2.5 g).

Mix the carrots, finely chopped, with sugar, ginger, vanilla, cinnamon, nuts and vegetable oil. Sift flour, combine with baking powder and small oatmeal, then add the resulting mixture to other ingredients. Knead the loose dough and roll it on a wooden board into a flat plate about a centimeter thick. Bake the cake in the oven for 20-25 minutes at a temperature of 200 ° C. When it cools down a bit, cut it into portions and serve cookies to the table.

Spicy cookies on tomato juice

If you want to truly surprise home and guests with a non-trivial delicacy, combine sugar, spices and tomato juice in pastries. To bake according to this original spiced cookie recipe you will need:

- tomato juice (125 ml);

- granulated sugar (2 tablespoons);

- premium wheat flour (2 cups);

- sunflower oil (3 tablespoons);

- table salt (1 teaspoon);

- freshly ground black pepper (on the tip of the knife);

- baking powder for dough (1 teaspoon);

- a mixture of spices to taste (for example, dried basil, rosemary, oregano).

Mix vegetable oil with tomato juice and put sugar, table salt and ground pepper into the resulting liquid. Combine the sifted flour with a baking powder and introduce in small portions into the oil substance. Knead the soft, slightly sticky, dough and lay it on a cutting board greased with vegetable oil.

If the lean dough rolls out poorly, cool it slightly and scroll through the meat grinder (large grill). Spread the resulting sausages on a baking paper with a spoon and carefully level.

Roll out a 0.5 cm thick cake and form cookies with notches or a glass. Bake confectionery for 15 minutes on baking paper, setting the oven to 190 ° C. While the finished baking has not cooled, slightly salt it (use the fine-grained Extra salt), sprinkle with a mixture of chopped herbs.
