To cook fish royally, take the following ingredients:

- fish - 2.5 kg;

- mushrooms - 600 g;

- coriander - to taste;

- ground black pepper - to taste;

- salt - to taste.

For this dish you need to get a whole pike, zander or salmon. Cream is best taken with a fat content of 20%. You can take any mushrooms to taste, preferably champignons.

Cooking

First, wash the mushrooms thoroughly, cut them into thin slices. Heat the pan, add vegetable oil and fry the mushrooms until the liquid evaporates completely. Then take onions, peel them, finely chop and add to the browned mushrooms. After a few minutes, when the onion is fried, add the carrots, previously peeled and grated on a coarse grater, to the pan. Add salt, pepper and cook for about 5 minutes, then add cream and mix thoroughly.

Now start preparing the fish. It must be thoroughly washed, cleaned and gutted, without separating the head and tail. Then dry the fish with napkins, then make a few cuts inside and place the lemon slices in them. Salt, pepper and add coriander.

Stuff fish with mushrooms and fix the incision with toothpicks or special clamps. Wrap the fish tightly in foil and send it to the oven preheated to 160 ° C for one hour. Then open the foil, increase the temperature to 200 degrees and bake the fish until golden brown. Serving the fish royally is best on a long flat dish, garnished with pickled tomatoes, cucumbers and herbs.

Royal fish can also be prepared not in foil, but in a mold. Then, potatoes, sour cream, eggs, tomatoes, milk and cheese are added to the list of ingredients. The first layer in the form is put sliced ​​potatoes, smeared with sour cream or homemade mayonnaise. The next layer is mushrooms fried with onions. The fish fillet, cleaned of bones, is placed on top. And also smeared with sour cream. Everything is poured with a mixture of 3-4 beaten eggs and 300 ml of milk, sprinkled with dill. On top of the dish is covered with grated cheese and tomato rings. The form is sent to the oven preheated to 180 ° C for about 35-40 minutes. To prepare this dish, you need to use a wide form or a baking sheet with high sides, so that the fish and vegetables are evenly baked and saturated with filling.
