Vegetable dishes, especially in the summer-autumn season, are the most fertile topic for any housewife. Vegetable casserole with ham and mushrooms is one of the many options for vegetable stew. Such a casserole is good in that it can be easily prepared from any set of vegetables at hand. It turns out delicious, satisfying, beautiful!

Take fresh vegetables in any quantity. Peel onions, carrots, zucchini. Pre-soak the eggplant in salt water, disassemble the cauliflower into inflorescences and boil for 5 minutes. Boil and chop the mushrooms (it is better to use porcini mushrooms or champignons). Rinse the tomatoes.

Prepare two pans: in one large and deep, the main course will be stewed, and in the second - smaller - you will fry some ingredients. Pour a little vegetable oil into both pans. Chop onions, carrots, passasses in a small frying pan. Add finely chopped ham or any boiled meat, mushrooms, and fry everything a little.

In a large pan, lightly fry the zucchini and eggplant, diced, add chopped cauliflower and chopped tomatoes, stew until half cooked. Put the entire contents of a small pan in a large pan, mix, salt, pepper and simmer with the lid open so that excess liquid boils out.

Beat 3-4 eggs in a bowl with a fork, pour into a large frying pan. After that, do not mix the components! Now you can close the lid of the pan and leave the casserole to cook on low heat. And you can openly put in a preheated oven for 10 minutes

Grate any hard cheese. Three minutes before cooking, sprinkle the dish with cheese and let it melt. When serving, sprinkle a vegetable casserole with ham and mushrooms finely chopped herbs.

Useful advice

A vegetable casserole with ham and mushrooms will also be delicious if it lacks any vegetables. If there are no tomatoes, you can add a spoon or two of tomato paste to the casserole.

It will be very beautiful if, before baking in the oven, first put the casserole in thin slices of zucchini and tomatoes, and then pour over the egg mass.
