Rinse carrots (raw), peel and grate. Transfer the grated carrots to a bowl and cover with 1 cup sugar. Stir with a spoon and leave for 1 hour so that the carrots are saturated with sugar and give juice. Cut the baking margarine into pieces and melt over low heat in a small bowl. After the margarine has melted, remove the bowl from the stove and set to cool.

Beat the eggs with a mixer, mix with carrots and sugar, add kefir, salt, mix and add 1 cup sifted flour. We thoroughly mix the mass with a wooden spoon or spatula so that there are no lumps, until smooth. Then pour the cooled melted margarine, add another glass of flour and soda. Mix everything thoroughly again.

Prepare a baking dish. Cut out a circle of the shape of paper for baking. Pour the dough into a mold. Preheat the oven to 150 degrees and bake a carrot cake for 20 minutes.

Now make a cream for carrot cake. Mix 400 grams of fat sour cream with 3 tablespoons of sugar. Using a mixer, whip the cream. Then we put the cream in the refrigerator for 20-30 minutes. After that, grease the finished carrot cake on top with sour cream and decorate with almond petals.
