Raw marinated champignons are actually only conditionally called so. This marinade does not include vinegar, sugar and salt; but nevertheless it creates the illusion of a pickled taste.

You will need
- - 0.5 kg of fresh champignons
- - juice of half a lemon
- - 1-2 cloves of garlic
- - 1 medium onion
- - 1/2 tsp sea salt
- - black pepper
- - 1 tbsp extra virgin olive oil
- - garlic press

Mushroom preparation:
Wash mushrooms in running water. Put in a colander or towel to dry.
Then cut the mushrooms into thin slices and put in a deep bowl.

Preparation of the marinade:
Mix the juice of half a lemon with salt, pepper and olive oil.
Press garlic and add to the mixture. Garlic in the marinade is optional.

Cut the onion into thin half rings, add to the mushrooms. Fill everything with the mixture.
Gently mix and put in the refrigerator for a couple of hours.
note
This recipe does not use regular marinade, which allows food to be stored for a long time. Therefore, pickled champignons can not be stored in raw food for more than two days.
Useful advice
To prevent mushrooms from breaking during stirring, it is best to close the dishes with a lid and shake several times.
