You will need
- Ingredients for 8 people:
- - 50 g of butter;
- - 4 small onions;
- - 1.5 kg of cauliflower;
- - 8 apples;
- - a tablespoon of lemon juice;
- - 2 cubes of vegetable stock;
- - 1.5 liters of milk;
- - 8 tablespoons of low-fat cream;
- - olive oil;
- - several branches of thyme (only leaves);
- - salt to taste.

We chop the onion, sort the cauliflower into small inflorescences. 6 apples, peel and finely chop.

In a large frying pan or pan with a thick bottom, melt the butter, lightly fry the onions. Add cauliflower and apples, fry for 5 minutes.

Add the broth cubes to the pan and pour the milk. Bring to a boil, reduce heat to a minimum and simmer all the ingredients until cauliflower is ready.

Using a blender, we turn the soup into mashed potatoes, salt to taste.

Before serving 2 apples, cut into thin strips and mix with lemon juice so that they do not darken.

Pour the soup into plates, add one tablespoon of cream to each plate, stir the cream in a spiral for beauty, spread a small amount of apples on top, add a little olive oil (literally 5-6 drops per plate) and thyme leaves.
