  • - 1 onion;

  • - 1 egg;

  • - vegetable oil, pepper, salt.

  • For filling:

  • - 250 g of cottage cheese or cream cheese;

  • - 200 g smoked salmon;

  • - green onions.

Peel the raw potatoes, grate it. It is better for pancakes to take yellow potatoes, it is more starchy. Squeeze out the shabby potatoes well, mix it and squeeze out the excess juice again, otherwise your pancakes will turn out to be greasy and wet.

Peel the onion, chop it very finely, add to the potatoes (in this case, the onion prevents the darkening of the finished pancakes), pour in a slightly beaten raw egg, cover the flour with pepper and salt. Mix everything well - potato dough for fritters is ready.

Pour the oil into a frying pan, heat it, spread the pancakes with a spoon, fry on one side for a couple of minutes until a crust forms, then turn over to the other side, fry until crusted. Put the finished pancakes on paper napkins to drain excess fat. From the resulting test should be about 25 fritters.

Put a small portion of cheese on top of each pancake (you can replace it with thick sour cream), put a piece of smoked salmon. From the top you can additionally decorate with feathers of green onions. Potato pancakes with smoked salmon are ready, you can serve them on the table.
