  • - 150 g of boiled mushrooms;

  • - ground black pepper;

Salad "Chickens in a basket"

Rinse and dry thoroughly chicken offal: liver, stomachs, hearts. Then boil in salted water until tender, cool and cut into small pieces. Wash and boil vegetables (potatoes and carrots) separately. Then, having peeled, cut the potatoes into small cubes, and grate the carrots on a coarse grater. Grind pickles along with washed and dried greens of dill or parsley. Hard-boiled quail eggs. It will take 5-6 minutes. Then cool the eggs in cold water, peel and gently separate the yolks from the proteins. Set the yolks aside, finely chop the whites and combine with the rest of the prepared ingredients. Salt, pepper, season with mayonnaise and mix well. Rinse multi-colored bell peppers, dry on a paper towel, cut in half and remove the seeds. Then put the prepared salad in the prepared halves of peppers and decorate with quail yolks, which, if desired, can be grated beforehand.

Cheese soup

Hard boil 3 quail eggs, cool, peel and set aside. Mix the rest (raw) eggs with cream, grated cheese and nutmeg. Bring the chicken stock cooked in advance to a boil, then remove from the stove, pour in the prepared egg-cream mixture and whisk everything with a whisk. Add gin and chopped chives. Salt and pepper. Pour into plates and decorate with halves of boiled quail eggs.

Meatloaf with quail eggs

Wash the meat, dry, cut, forming a layer with a thickness of about 1.5-2 centimeters, and lightly beat off with a wooden hammer. Salt and pepper. Finely chop the boiled mushrooms, peel and chop the garlic with a knife or pass through a press. Hard-boiled quail eggs, cool in cold water and clear of shells. On a meat layer, lay a layer of chopped mushrooms mixed with chopped garlic and boiled quail eggs whole. Carefully roll the meat with the filling in the form of a roll and tightly tighten with twine. Put the roll in the greased ducklings or stewpan, spread the meat on top with tomato paste and put in a preheated oven for an hour and a half and a half bake at a temperature of 180 ° C. Before serving the meatloaf on the table, carefully remove the twine.

To prevent eggshells from bursting during heating and boiling water, the quail eggs intended for cooking should be at room temperature.

To make boiled quail eggs better cleaned, it is recommended to cool them in cold water mixed with a small amount of table vinegar.
