Mix everything thoroughly and put on a slow fire. Cook until the cream thickens - usually this process takes about five minutes. Before use, the cream must be cooled.

This is convenient if you cook well in advance, but want the waffle portion to remain firm and crunchy by the time the guests arrive. In such a situation, it would be preferable to prepare the base in advance and start it immediately before use, so that the cream does not have time to absorb and soften the waffles. To do this, use a cornet or pastry syringe. Place the prepared filling in your device and squeeze it into the tubes on both sides so that the middle does not remain empty.
