Take the fruits of a walnut of the so-called milk maturity - such fruits have a green, not yet formed peel. Peel them from the top green crust, fill with cold clean water and leave for two days. Change the water in the tank 3-4 times a day.

Prepare lime water. To do this, mix clean cold water and hydrated lime in a proportion of 10: 1 (that is, for example, take 500 g of lime per 5 liters of water). Let the mixture brew for 3-4 hours, then strain with gauze.

Dip the nuts in lime water for a day, often stir them. This is necessary in order to get rid of bitterness. After a day, thoroughly rinse the nuts and pierce them with a fork in several places. Then again immerse them in cold water for two days.

Submerge the nuts in boiling water and cook for 10 minutes. After that, drain the water by pouring them into a colander.

Prepare sugar syrup: pour sugar into a sugar (with the calculation of 1 kilogram of sugar per 1 kilogram of nuts) a glass of water and bring to a boil. In a boiling syrup, put a few buds of cloves, the juice of one large lemon and the nuts themselves, prepared as described above.

Bring the resulting mixture to a boil, let cool and bring to a boil again. Repeat the procedure three times, then cook the jam until cooked. When it is ready, let it cool and pour it into dry clean jars.

Useful advice

If you are on a vegetarian diet, include more nuts in your diet to get enough protein and fiber.

Use nuts as a “snack”: they are very nutritious and, unlike buns and chocolates, do not harm the figure.

Eat walnuts to protect your body from various diseases: nuts contain a large amount of antioxidants.
