Separate the proteins from the yolks and leave them for several hours at room temperature, then beat them in a foam. Fry chopped nuts in a dry pan. Mix them with flour and sugar. Then carefully add the mixture to the protein foam and mix until smooth.

Take 2 baking dishes. Cover their bottom with baking paper. Until the protein mass has settled, quickly lay it out in a mold so that you get 2 cakes with a thickness of about 1 centimeter.

Preheat the oven to 110 degrees. Put the forms with the dough into it and bake the cakes for 2 hours. Remove from the oven and let them cool.

While the cakes are cooling, prepare 2 creams: dark and light. For each, first mix milk, sugar and yolks. Heat the mixture with constant stirring. Then strain and cool. Whip the cream, gradually adding soft butter and other ingredients.
