In the evening, soak the peeled cereal in 1 liter of water. Leave it overnight. William Pokhlebkin recommends soaking barley 10-12 hours.

After a few hours, evaluate the result. The cereal swelled, became elastic and smooth. Water is completely or almost completely absorbed. If this is not the case, then the remaining liquid must be drained.

Pour milk into a smaller pan and heat it to 40-42 degrees. While the milk is warming, pour water into a large saucepan and boil, then reduce the heat to a minimum. Then carefully place the dishes in the pan with warmed milk. You got a water bath, on which the favorite porridge of Peter the Great will be cooked.

Pour your cereal into the milk, sugar and mix. You can’t touch the porridge all the time during cooking.

While cooking, monitor the water level in the bottom pan. Add boiling water as needed. Cooking barley in milk - at least 6 hours.

After 6 hours, evaluate the result. Milk during this time melted, becoming creamy pink, porridge milked to a delicate cream.
