Duck recipe with oranges

To cook a duck with oranges, you will need the following products:

- 1 duck carcass of approximately 2.5 kg

- 6 oranges;

- 1 apple;

- 500 ml of dry red wine;

- 2 tsp mustard;

- 2-3 tsp granulated sugar;

- 1 sprig of rosemary;

- 1 tbsp. l starch;

- parsley;

- ground black pepper;

- salt.

Gut the duck, rinse well under running water, pat it dry with a napkin and rub it thoroughly inside and out with a mixture of salt and pepper. Wash 1 orange with hot water, then carefully cut the zest from it and squeeze the juice out of the pulp. Peel an apple and 2 oranges, cut into slices and stuff the duck with them. Put a sprig of rosemary inside and stab the abdomen with wooden toothpicks.

Heat the oven to 200 ° C. Place the duck with the breast on the baking sheet or in the fireproof form. Pour in half the norm of red dry wine and bake the bird for half an hour. Then often chop the skin of the duck with a fork, pour in the remaining wine and continue cooking, periodically pouring the carcass on the sauce resulting from roasting. Bake the duck until fully cooked for another hour and a half.

Wash another orange, wipe and cut into thin circles. Approximately 10 minutes before the end of the duck cooking, cover them with a carcass. Cut the remaining 2 oranges in half and squeeze the juice.

Remove the duck from the oven and place it in a warm place. Remove fat from the resulting sauce. Then add the juice of 3 oranges, mix and pour into the pan. Put finely grated orange zest, mustard, sugar and cook for 5 minutes. After this, strain the sauce and stiffen with starch.

Put the baked duck on a dish, garnish with slices of orange, parsley and serve to the table, watering with the prepared sauce.
