“Lift me up” - this is how tiramisu dessert sounds literally in Russian. Thanks to the combination of coffee and chocolate in this light Italian cake, he gained the fame of a “love treat”.

    • For Savoyardi:
    • - 3 eggs;
    • - 100 g of sugar;
    • - 100 g flour;
    • - 20 g of butter;
    • - 30 g of powdered sugar;
    • - a pinch of salt.
    • For tiramisu:
    • - 4 eggs;
    • - 500 g of mascarpone cheese;
    • - 100 g of sugar;
    • - 250 ml of coffee;
    • - 250 g of savoyardi;
    • - 1.5 tbsp. spoons of brandy;
    • - 3 tablespoons of cocoa powder.

First of all, prepare Savoyardi or as ladies sticks are also called - this is an obligatory component of tiramisu. Separate the yolks from the proteins. Beat whites in a strong foam. Mix the yolks and 75 g of sugar carefully, gradually add 75 g of flour sifted through a sieve, and salt. Gently add whipped proteins to the dough with a spoon and gently stir. The dough should be thick and airy.

Grease a baking sheet with oil and sprinkle lightly with flour. Confectionery syringe with a hole diameter of about 15 mm fill with dough. Squeeze 10 cm sticks out of it onto a baking sheet. If there is no confectionery syringe, use an ordinary plastic bag, cutting off the corner of it.

Combine the remaining sugar and powdered sugar. Sprinkle the sticks with half the sugar mixture and leave for 10 minutes to dissolve the sugar. After that, sprinkle cookies with the second half of sugar. After 2 minutes, place the pan in the oven preheated to 150 ° C. Bake savoyards until golden brown. Leave the finished cookies to cool and dry on the table for about 5 - 8 hours.

Start cooking tiramisu. Separate the whites from the yolks. Beat the yolks with sugar until smooth. Add a pinch of salt to the proteins and beat until they turn into a thick mass. Add the mascarpone to the yolk mass and stir with a spoon. After this, mix whipped proteins into the cream.

Make coffee, add sugar to it and cool. Pour cognac into cold coffee. Prepare dishes, preferably rectangular with high walls. Dip each cookie in coffee and place the soaked cookies in the first layer. Put half the cream on top. Then again lay out a layer of cookies and fill with the remaining cream. Place the cake in the refrigerator for 5 to 10 hours. Sprinkle the prepared tiramisu with cocoa powder and cut into pieces.

Make sure that the cream is not liquid, otherwise it will not keep its shape and the tiramisu will spread on a plate.

Useful advice

Instead of brandy, you can add another strong alcoholic drink to tiramisu, for example, amaretto, marsala, whiskey, rum, sambuca, coffee liquor.
