Hassle with him, of course, a lot, but the result will please the birthday man. The cake turns out to be high, beautiful and very tasty, truly royal.

  • For biscuit cakes:

  • - 5 eggs;

  • - ¾ cup sugar;

  • - ¾ cup flour;

  • - vanillin;

  • - 100-150 ml of rum or wine for impregnation.

  • For sand cakes:

  • - 200 g butter or margarine;

  • - ¾ cup sugar;

  • - 2 eggs;

  • - 1-2 tbsp. l cocoa powder;

  • - 1/3 tsp soda;

  • - 2-2 ½ cup flour.

  • For butter cream:

  • - 200 g of butter;

  • - 8 tbsp. l condensed milk with sugar;

  • - vanillin.

  • For protein cream:

  • - 3 squirrels;

  • - 6 tbsp. l powdered sugar;

  • - ½ cup peeled walnuts.

First of all, prepare a sponge cake dough for cakes. To do this, carefully separate the yolks from the proteins. Set the yolks aside, and whisk the whites with a mixer until they grow 3-4 times in volume. After that, start to pour in a little sugar. When you get a cool, strong foam, without stopping whipping, put the yolks in it, then add the vanillin and flour (mix it with the mass very carefully so that no lumps form and squirrels do not settle).

Heat the baking dish in a hot oven and grease it with butter. Cover the bottom with parchment, pour the cooked dough and put in the oven. Bake the cake for 35-40 minutes at a temperature of 200-220 ° C. Then let the biscuit cool in shape, then transfer to a dish and, freeing from parchment, carefully cut into 2 cakes. Soak each rum or wine.

To prepare a shortcrust pastry, crush the cooled eggs with white sugar, put the softened butter or margarine, soda and cocoa powder. Stir the mixture until smooth. Then gradually pour the sifted wheat flour and knead the dough. It should turn out soft and elastic. Divide the dough into 3 equal parts and bake in the oven over medium heat cakes.

Make an oil cream. To do this, remove the oil from the refrigerator a few hours before cooking. When it becomes soft, beat the butter with a mixer until splendid. Then gradually add 1 tablespoon of condensed milk, which should be at room temperature. As soon as a homogeneous plastic mass is obtained, put the vanillin and mix everything thoroughly.

To prepare a protein cream, pour the proteins into the pan and beat them until a thick foam lather is obtained, which should keep its shape (this will take at least 15 minutes). Then pour in powdered sugar in small portions. After putting the whole amount of powder, continue to beat for another 1-2 minutes and add the walnuts kernels passed through the meat grinder.

Put a shortcake on a dish and apply a protein cream on it. Then put the biscuit and grease it with butter cream. On top, place a second shortbread cake, which is smeared with protein cream. Then - biscuit covered with butter cream. Lay the last shortbread cake on top and smear it with protein cream, and apply the butter on the sides of the cake. Use a confectionery syringe to make a congratulatory inscription with butter cream.

Soak biscuit cakes with wine or rum is recommended 6-7 hours before the assembly of the cake.

Protein cream should be prepared immediately before use, since even with short storage it settles and loses its splendor.

Useful advice

Ready cake "Royal" should be soaked for at least 10-15 hours in a cool place, so it is better to make it on the eve of the celebration.
