One of the most famous cakes in Russia is the Enchantress, a sponge cake with custard. It is prepared quite simply, and on the festive table it looks very impressive.

You will need

  • Biscuit:

  • Wheat flour 1 measuring cup

  • Sugar 1 measuring cup

  • 4 eggs

  • Baking powder 0.5 teaspoons

  • Vegetable oil
  • Custard:

  • Milk 1 measuring cup

  • Sugar 0.5 measuring cup

  • Eggs 3 pcs.

  • Butter 100 g

  • Flour 2.5 tbsp. spoons
  • Glaze:

  • Milk 4-5 tbsp. spoons

  • Butter 30-40 g

  • Sugar 0.5 cup

  • Cocoa 1 teaspoon

First, make a biscuit dough. Separate the yolks from the proteins. Separately, whip the whites in a thick foam. We begin to whip at low speeds, which we gradually increase.

We mix the yolks with sugar and also beat until the sugar is completely dissolved. Mix the yolks with the proteins.

Sift the flour, add the baking powder. Gradually pour the egg mixture into the flour and knead the dough.

Preheat the oven to 200 degrees.

Lubricate the dough form with vegetable refined oil.

We spread the dough into a mold and bake for 25 minutes. As soon as the biscuit rises, reduce the heat so that it does not burn.

When the biscuit is ready, turn off the heat and leave it in the oven for 4-5 hours. It should cool.

We warm the milk a little. Beat the egg at slow speeds. Add sugar, vanilla sugar, and egg to milk. Carefully add the flour. Cook over low heat. In the process of cooking, beat it all the time with a mixer at low speeds.

When the cream thickens, put the pan in a container of cold water, add softened butter and whisk, but at high speed.

We cut the cake in half, put the cream into one half and close it with the second half of the cake. Lubricate the top of the cake with the remaining cream.

Cooking the icing.

Melt the butter in a saucepan, add milk, sugar and cocoa powder. Cook, stirring constantly until sugar melts.

Glaze should not cool down strongly, otherwise it will harden. When preparing the cream, it is likely that lumps will form in it, which is why you are invited to use a mixer, not a spoon.

Also, when baking a cake, crushed walnuts of 100 g are added to the dough. If you cut a biscuit into three parts and soak them all with cream, it will be even tastier. In this case, do not forget to increase in equal parts the proportions of the products for the preparation of the cream. Instead of glaze, you can sprinkle with grated milk chocolate.
