Terrin is an exquisite dish of French cuisine, which is quite popular among Russian gourmets. Terrine can be prepared from a variety of foods. This recipe presents an option that uses mainly vegetables that give the dish a special taste.

  • - light mayonnaise (25 g);

First prepare the eggplant. To do this, take the vegetables, rinse. Cut into long longitudinal strips, salt and transfer to a separate container. Next, take a pan, add a little vegetable oil and fry each plastic eggplant for about 3 minutes until soft and a crispy crust appears. When the eggplants are ready, put the vegetables on a paper towel so that the excess fat is absorbed.

Rinse the peppers well under running water. Peel the seeds, cut the stalks. Divide the peppers into several pieces and place on parchment paper. Bake in the oven at about 140 degrees until soft. Wait for the peppers to cool and chop the vegetables into cubes. The same should be done with tomatoes.

Free the processed cheese from packaging, grind with a blender or grater, transfer to a deep bowl. Season the cheese mass with chopped garlic, mayonnaise, salt and herbs.

The next step is to lay out the terrine in layers. This process should be done in a deep cup or pan, since the terrine should ideally be semicircular in shape. Put eggplant on the bottom of the bowl in the form of a fan. Next, lay out part of the curd mass, leveling with a spoon. 3 layer - baked pepper, 4 layer - tomatoes. The following layers are repeated in the same sequence until all vegetables are finished.

Place the terrine overnight in a cold place, and in the morning turn the container on a plate and decorate the dish with olives or slices of lemon.

note

The bottom of the container in which the terrine will be laid out should be covered with cling film. So the dish will be easier to take out of the mold.

Instead of vegetables, you can add meat, ham, fish or seafood to the terrine.
