Ducks are traditionally baked in the oven to the festive table with apples, buckwheat porridge and even with oranges, but no less appetizing and tasty, soups of duck meat are obtained. It is rich in vitamin B and other beneficial trace elements. It is believed that duck meat increases sexual potency. This bird is fatter in comparison with chicken and turkey, so it is hardly suitable for diet food. But if duck meat is not contraindicated for you, then it is worth introducing it into your diet. Duck fat contains various enzymes that help cleanse the body of harmful carcinogens.

For duck soup with homemade noodles, both broiler and village birds are suitable. In broiler ducks, meat is softer, closer to chicken to taste, and broiler soup is prepared faster. Village birds are larger, fatter, with yellowish skin. Broths and soups from domestic ducks are more aromatic and rich. If for soup you bought a duck in a store (broiler), then defrost it before cooking, then rinse it well, gut it and cut it into portions.

Put the pieces of duck in the pan, fill with cold water, put on a small fire. When the broth boils, remove the foam, add salt and cover the pan with a lid. The broth should languish for about forty minutes.

To make homemade noodles, sprinkle flour on a clean table or special chopping board. Make a groove in the flour and pour the egg into it. Then gradually adding cold water, knead the steep dough. Thinly roll the dough with a rolling pin, sprinkle flour on top and cut into strips 5 centimeters wide. Fold the strips of dough in several rows and finely chop along. You should get noodles 5 centimeters long and 0.5 centimeters wide. Then lay the strips in one layer on a sieve and sift off the excess flour. Noodles are ready for cooking.

Wash carrots and potatoes well, peel, cut into cubes and add to duck broth. Peel the onion and cut into thin half rings. When the duck is boiled for 10 minutes with potatoes and carrots, put onions in a pan and add spices. For duck soup, bay leaf and different types of pepper peas are best: black, white.

Add a handful of homemade noodles to the soup and stir well so that the noodles do not stick to the bottom of the pan. Cook for another 15-20 minutes.

Wash, dry and finely chop the parsley and chives. When the duck soup is ready, sprinkle it with greens on top.

To make the duck in the soup soft, you need to cook the broth over low heat.

Useful advice

If you bought duck with giblets, add them to the broth when cooking. And the soup will acquire additional shades of taste and aroma.
