There are many variations of hodgepodge. But the most popular of all is the hodgepodge team, in which various meat products are added. A mandatory component of this soup is smoked meat. Try adding variety to a traditional recipe by adding smoked chicken. For cooking, take the whole bird - the bones will add richness to the broth.

Instruction manual

1

Prepare a meat kit for hodgepodge. In addition to chicken, you will need boiled or smoked meat, ham, sausages or smoked sausages and other meat products if desired. Cut them into small pieces. Remove the skin from the chicken and cut the meat, chop it and combine with the rest of the meat set.

2

Put chicken bones in a pan, add sugar beef bone, crushed along. Pour in hot water and bring to a boil. Remove the foam formed on the surface, reduce the heat under the pan, add peppercorns and bay leaf. Cook for 2-3 hours. Clean as a foam forms with a slotted spoon. If the finished broth does not seem transparent enough to you, you can strain it by first removing bones from it.

3

Chop the onion into thin rings. Heat vegetable oil in a pan and sauté the onion until golden brown, constantly stirring it with a wooden spatula. Add tomato paste to the pan and continue frying. Peel pickles from skin and seeds, cut into slices. Put them in another pan and sauté in a small amount of broth for 5-7 minutes.

4

Put cucumbers and onion fried in tomato in a saucepan with broth. Add the meat set, smoked chicken and salt. Bring the hodgepodge to a boil. Cook the soup for 5-7 minutes, turn off the heat and let it brew under a closed lid. Try the finished dish - if the taste does not seem saturated enough to you, add a little freshly squeezed lemon juice into it. If necessary, salt the soup.

5

Cut the lemon into slices, remove the peel and seeds. Chop parsley and dill finely, chop the olives in circles. Put greens, olives and capers in a pan. Pour the hodgepodge over heated plates, add half a mug of lemon to each. Serve with sour cream.
