To the resulting mass add salt, sugar and flour, previously sifting it through a sieve. Knead the dough not too steep so that it turns out soft and slightly sticky.

Grease a baking sheet with oil or cover it with parchment paper. Form with a tablespoon small oval cakes, roll them in flour and put on a baking sheet, at a distance from each other, since cheese cakes can increase in size during baking.

Preheat the oven to 180 degrees and bake cheesecakes for about 30 minutes. Serve with condensed milk or sour cream. Bon Appetit!

The amount of flour may vary. It depends on the humidity of the cottage cheese and the size of the eggs. If you overdo it with the addition of flour, the cheesecakes will turn out to be too dense and tough.

It’s best to use dry and sufficiently fat cottage cheese for making cottage cheese pancakes. Also try the cottage cheese before preparing the cheese cakes, because if the cottage cheese is sour, then the amount of sugar will need to be increased. If the cottage cheese is sweet, then the amount of sugar should be reduced.
