You will need

    • 200 g of slightly salted fish (salmon or trout)
    • 2 cups rice (better to use a round grain)
    • 1 cucumber
    • 2 tablespoons of Japanese vinegar
    • 2 tablespoons of sugar
    • 2 teaspoons of salt
    • nori sheets
    • wasabi
    • pickled ginger
    • soy sauce

Rinse the rice under cold running water. Fill with water in a ratio of 1: 1. Salt. Bring to a boil and simmer for 10-15 minutes. During this time, the water should completely evaporate. Remove from heat and leave it under the lid for 10 minutes.

Prepare a rice dressing. Dissolve 2 tablespoons of sugar and 2 teaspoons of salt in 2 tablespoons of Japanese vinegar.

Put the rice in a large dish without stirring, and pour in the cooked dressing. Leave the rice to cool.

Prepare the filling. Cut the fish into thin strips. Chop the cucumber into strips.

Lay a sheet of nori on the mat. Dipped in cold water, place the rice along the entire length of the sheet, leaving 1-1.5 cm from one edge.

In the middle, put the filling: fish, cucumber.

Use a mat to twist the roll. Cut the resulting roll into portions.

The finished dish is served on an open saucer with wasabi sauce and garnished with pickled ginger. Bon Appetit!
