Risotto is both a simple and sophisticated rice dish, which came to us from Italian cuisine. There are many variations of this dish, which sometimes include unexpected ingredients. A vivid example is risotto with pumpkin.

You will need

    • 1 medium pumpkin;
    • 3 tbsp. tablespoons of vegetable oil;
    • 1 onion;
    • 1-2 heads of garlic;
    • 300-400 g of long-grain rice of the Arborio or Carnaroli variety;
    • 200 ml of dry white wine;
    • 100 g of hard cheese;
    • 2 stalks of parsley or celery;
    • salt;
    • black pepper.

Cut the pumpkin, remove the seeds and pulp from it into small cubes. Lubricate the baking sheet with a thin layer of vegetable oil and put pumpkin cubes on it, salt and pepper them. Place the pan in the oven, heated to 200 degrees. As the preparation takes approximately 20 minutes, the pumpkin will acquire a golden hue. When the cubes become soft enough to the touch, they can be removed from the oven.

Pour a couple of tablespoons of vegetable oil into the pan and pour very finely chopped onions into it. Fry it for several minutes until it becomes completely transparent. In a pan with onions, you can also add a little chopped garlic.

Put rice in a pan. Thoroughly mix it with onion and garlic, then let the rice warm up for two to three minutes. Then pour the wine into the pan and wait for the moment when it begins to boil. After this, add the broth in small portions in several stages, constantly stirring the dish. Add each new portion of the broth only when the dish absorbs all the liquid. After pouring the entire broth, turn off the fire and cook the rice, without ceasing to stir the dish. It takes about ten to fifteen minutes to cook the risotto.

Check rice for preparedness. It should be soft, but have a slightly hard core. Put the pumpkin cubes in the pan and mix the dish thoroughly. Then turn off the heat and let the dish stand for a bit, no more than a minute.

Add the butter to the risotto and stir the dish until it becomes a homogeneous mass. Then sprinkle pumpkin risotto with grated hard cheese. You can decorate the finished dish with fresh herbs, season with allspice and add the appropriate sauce.
