Peel and finely chop the onions and carrots. Thaw mussels at room temperature if necessary. Rinse the rice 5-6 times in cold water.

Heat olive oil in a pan with a thick bottom and fry onions and carrots in it. Then add the mussels and cook them for about a minute. After the set time, put the rice in the pan, mix and fry a little.

Add a little water, curry to the pan and add salt to taste. When the liquid is completely absorbed, add a little more water - and so on until the rice becomes soft. Put the finished risotto on plates, decorate with herbs and serve with white wine to the table.
