Rinse and soak the mushrooms for 5-6 hours, during which time they will swell and become softer, as a result of which their cooking time will be significantly reduced. After this, drain the water into another dish and rinse them again. Then fill with the water in which they were soaked, having previously filtered it through several layers of gauze. Thus, it will be possible to avoid getting the rest of the earth into the broth.

Cook mushrooms for 30-40 minutes on low heat until cooked. Meanwhile, finely chop the onion and spasser it in vegetable oil until transparent. Fry the flour until golden brown in another pan.

Rinse the prepared mushrooms with hot water and chop finely. Put them in a pan with onions and fry for 10 minutes, adding butter. Dilute flour with warm mushroom broth to the required density so that there are no lumps, and boil, removing the foam.

Combine everything in one dish, put salt, pepper and bay leaf and cook for 5-10 minutes. You may end up cooking it if the gravy is for vegans.

At the end, add cream or sour cream, bring the mixture to a boil and remove from heat. Mushroom sauce is ready; it goes well with porridges, pasta and vegetable dishes, as well as meat dishes. When serving, pour the dish over it.

Without soaking, dry mushrooms are cooked for at least 2-3 hours.

The most fragrant gravy is obtained from porcini mushrooms.

For lower calorie content of mushroom sauce, cream or sour cream can be replaced with 1 cup of milk.

In mushroom sauce before adding cream or sour cream, if desired, you can put 1 teaspoon of tomato paste.

Instead of dried mushrooms for gravy, you can use fresh ones, champignons are especially good, and besides, they can be cooked much faster. Gravy can also be prepared from salted mushrooms.

You can add carrots and parsley root, fresh or dried dill greens to the mushroom sauce.
