Ingredients for the test base:

  • 30 g butter;
  • 175 g of sugar;
  • 2 egg yolks;
  • 0.4 kg of flour;
  • 3 tablespoons of cold water;
  • salt.

Ingredients for the filling:

  • 0.5 kg of ripe gooseberries;
  • 3 teaspoons of corn starch.

Sauce Ingredients:

  • 3 egg yolks;
  • 1 teaspoon flour;
  • 100 g cane sugar;
  • 150 ml of cream.

Cooking:

  1. Softened butter, sugar, egg yolks, sifted flour and salt to combine in one bowl, mix until smooth. This can be done in a blender. At the end of mixing, pour cold water into the flour mass, mix everything again so that the dough is collected in one ball, then wrap it in plastic wrap and place in the refrigerator for 1 hour.
  2. After an hour, turn on the oven and preheat to 180 degrees, and grease the baking dish (28-30 cm in diameter) with oil.
  3. Remove the dough from the refrigerator, unwind, roll out with a rolling pin, shift into shape and stretch, form high sides.
  4. Prick the test base with a fork and place for a quarter of an hour in a hot oven.
  5. Wash the whole gooseberry, simultaneously removing all the tails and stalks. Cut each berry in half. Put all the halves in a bowl, cover with starch and mix gently with your hands.
  6. In a blender, combine and mix until smooth the cream, sugar, flour, yolks. If the gooseberry is sour, then you need to take more sugar than indicated in the recipe.
  7. Remove the baked test base from the oven and cool slightly.
  8. Put the whole gooseberry in a test base, level with your hands and pour the sauce.
  9. Formed pie with gooseberries in a creamy sauce, place in the oven and bake for 30-40 minutes. Check the readiness of the cake with a match or a toothpick. Note that the baking time of the cake is indicated approximately, since each oven has its own characteristics, which must be taken into account.
  10. Remove the finished gooseberry pie from the oven, cut into pieces and serve with your favorite drink.
