You will need
- - 500 g of potatoes
- - 1 bell pepper
- - 70 g of sausage
- - 1 head of red onion
- - olive oil
- - 100 g of green peas (frozen or fresh)
- - 6 eggs
- - ground black pepper

Boil potatoes in slightly salted water without peeling. Cut the sausage into thin slices, onion and pepper - rings.

After the potatoes are boiled, drain the water, peel it and cut into small cubes. Mix all the ingredients in one pan and add green peas. Fry vegetables for 10 minutes over low heat.

When the vegetable mixture is ready, pour beaten eggs into it and put in the oven for 15 minutes. In order to better prepare the dish, fry the omelet on both sides.

On the table, a vegetable omelet can be served with herbs or a side dish of fresh vegetables. Sausage can be used of any kind - ham, smoked, boiled or replaced with meat.
